An internationally recognized chef, Samuel Sirois represented Canada at the 2023 Bocuse d’Or final in Lyon, the most prestigious culinary competition in the world. You may have seen his journey featured in L’effet Bocuse d’Or, the documentary series available on Vrai (now also on Apple), which follows the Canadian team all the way to the global stage. Today, Sirois shares his passion and expertise with the next generation of chefs as an instructor at the ITHQ.
 
To celebrate lobster season, Chef Sirois presents a refined, seasonal menu where each dish highlights the elegance of peak ingredients. Think briny oysters with buckwheat crunch, Québec asparagus in a light, airy sabayon, and lobster served two ways, brightened with citrus and fresh herbs. The meal concludes with a flaky brioche layered with fruit, rhubarb, and floral notes. A sensory experience where precision, technique, and emotion come together.
