WHO IS CHEF BRYAN FLORENCIO RAJARISON?

Bryan Florencio Rajarison is a Montreal-based entrepreneur, chef, and art director of Malagasy heritage. As the founder and owner of 325 F | Cuisine de Madagascar, he dedicates his work to showcasing the richness of Malagasy culture through gastronomy, design, and the arts.

Born in Montreal to parents who immigrated from Madagascar, he grew up in an environment where cooking was far more than just a meal: it was a language, a repository of memory, and a link between generations. From the age of 8, he joined his family in the kitchen, learning traditional Malagasy recipes, ancestral techniques, and the importance of passing down traditions. It was during this time that he developed a genuine passion for gastronomy and discovered the power of the dining table to bring people together.

At 14, he took his first steps into the restaurant industry by working in the kitchens of a seniors' residence. This initial experience taught him discipline, rigor, and a commitment to service, while confirming his desire to pursue a career in the culinary world.

At 21, while pursuing studies in design and architecture, Bryan Florencio Rajarison turned his passion into a business venture by launching a Malagasy food delivery service for the Malagasy community in Greater Montreal. His goal was to allow the diaspora to reconnect with the flavors of their childhood while introducing a cuisine that was still largely unknown in Quebec. The menu featured items such as *nems* (spring rolls), *sambos* (samosas), *kitoza* (cured meat strips), and Malagasy *achards* (pickled vegetables), alongside various traditional dishes prepared using family recipes. The success of this initiative confirmed the potential of Malagasy cuisine on the Montreal scene and laid the groundwork for a more ambitious project.

In September 2023, at the age of 23, he opened 325 F | Cuisine de Madagascar in Montreal’s Plateau-Mont-Royal neighborhood. The restaurant quickly became a benchmark for Malagasy cuisine in Canada. Bryan offers dishes that remain true to Madagascar’s traditions while highlighting the African, Asian, and French influences that shape the island’s culinary identity.

Under his leadership, 325 F has also become a cultural hub where gastronomy, history, and heritage intersect. The establishment participates in various culinary and cultural events, actively contributing to the promotion of Malagasy culture in Quebec.

Alongside his work as a chef, Bryan pursues an artistic direction that integrates gastronomy, design, photography, video, and object creation. His projects include FOKO, a collection of eighteen ceramic cups inspired by Madagascar’s eighteen ethnic groups, created in collaboration with Quebec ceramicist Marko Savard. This project exemplifies his desire to foster a dialogue between the arts and gastronomy, telling the story of Malagasy identity through new forms of expression.

Today, Bryan Florencio Rajarison continues to develop 325 F and various cultural and artistic projects. Throughout his journey, he remains dedicated to preserving and sharing Malagasy heritage while building bridges between cultures. For him, cuisine is a universal language capable of telling a story, bringing communities together, and taking people on a journey far beyond borders.
