Delicious crepe suzette recipe to celebrate Candlemas!

Ingredients

7 to 8 servings

 

Crepes

-

2 large eggs
1 cup whole milk
⅔ cup all-purpose flour
4 tablespoons of melted butter
1 tablespoon of sugar
½ teaspoon of salt

 

Orange butter

-

5 tablespoons unsalted butter, softened
5 tablespoons of sugar
2 tablespoons of orange zest
2 tablespoons of orange juice
¼ cup of Grand Marnier
2 tablespoons of brandy

 

Preparation

 

Pancakes

-

1 / Whisk together eggs, milk, flour, 2 tablespoons of melted butter, sugar and salt until smooth.

2 / Heat an 11 "or 12" pan over medium heat for 5 minutes.

3 / Brush the pan with melted butter. Pour enough batter to cover the bottom of the pan, about 1/3 cup.

4 / Stir the pan to coat the bottom with the dough. Cook 1 to 2 minutes and turn over then cook 1 additional minute.

 

Orange butter

-

1 / Mix the butter, 4 tablespoons of sugar, the orange zest and the orange juice.

2 / Preheat the oven on "broil" and place a teaspoon of orange butter in the center of each pancake, then fold the pancakes in half, then in half again.

3 / Return the pancakes to the pan and sprinkle with the remaining tablespoon of sugar.

4 / Place the pan in the oven until the sugar begins to caramelize, then remove from the oven.

5 / Heat the brandy and the Grand Marnier in a small saucepan over very low heat, 1 to 2 minutes then remove from the heat.

6 / Carefully light the sauce mixture with a long-handled lighter and pour the mixture over the pancakes inside the pan. Let the flame go out completely.
